This is dairy free and suitable for vegans. It tastes delicious but needs to be eaten within the week. You can leave out the nuts if you wish.



  1. Preheat the oven to 170C ( gas 3 or 325 F) and line a 7 inch round cake tin with baking parchment
  2. Place all the dry ingredients into a mixing bowl together with the bananas
  3. Gently add the oil and water, stirring all the time
  4. Mix well and pour into the cake tin. Bake for about 45-50 minutes until well risen and the skewer comes out clean. Leave to cool in the tin for five minutes before turning out onto a wire rack to cool.
