Soft biscuits, very good for people who find it hard to chew



  1. Prepare oven at Gas 3-4 or 325-350F or 170-180C Cream together the butter and sugar until light and fluffy then add the vanilla essence.
  2. Carefully stir in the flour until all is well mixed.
  3. Divide the mixture into 20 pieces. Wet your hands with cold water then roll each into a ball and coat with coconut(or ground almonds or oats if you don't like coconut).
  4. Place on a greased baking tray or one lined with baking parchment. Press the balls down slightly with a fork and gently place a small piece of cherry in the centre of each biscuit.
  5. Bake for about 15-20 minutes until golden brown.
