Dates are very good for you - only Mabel can't remember why exactly.



  1. Pre heat oven to Gas mark 3, 170C 325 F and line a 7 inch round cake tin
  2. Cream the butter and the sugar until light and fluffy
  3. Add the two eggs a bit at a time, mixing well inbetween.
  4. Add the grated rind and dates then carefully fold in the flour.
  5. Add the orange juice and gently place the mixture in the cake tin. Bake for about 1 1/4 hours until springy to the touch in the middle and the cake skewer comes out clean
  6. Prick the top with a fork then pour over the demerara and orange juice mixture. Leave for five minutes in the tin then remove and place on a cooling rack.
