Easy to make and tasty any time of the year



  1. Pre-heat overn to gas mark 7 425F or 220C and grease or line a baking tray with baking parchment
  2. Rub in flour and fat with fingertips until the mixutre resembles breadcrumbs
  3. Add sugar, lemon rind and currants
  4. Moisten with beaten egg
  5. Roll out to a 1/4 inch thick and cut with a 3 inch round cutter.
  6. Bake 20 minutes or until lightly golden in colour. Placeon a cooling tray and sprinkle immediately with castor sugar.
