A nice moist cake that goes well with a cup of tea on a winter's afternoon



  1. Pre heat oven to Gas Mark 4, 350F 170C.
  2. Line a seven inch round cake tin with baking parchment
  3. Cream the butter and sugar until light and fuffly
  4. Gradually add the beaten eggs, a little at a time, beating well inbetween each addition
  5. Add the orange rind and sultanas then carefully fold in the flour
  6. Bake for 1 1/4 hours until golden brown and skewer inserted in the cake's middle comes out clean. Leave in the tin for five minutes then turn onto a wire cooling tray.
